The Las Vegas strip steak is a new cut of steak developed by a team including meat specialists from Oklahoma State University’s Robert M. Kerr Food & Agricultural Products Center.

While many people enjoy finding new ways to cook and prepare meals, Jake Nelson and Tony Mata have found a completely new steak for people to try out.
The two have developed a new cut of steak from a muscle historically used in ground beef and roasts.
Nelson is a meat processing specialist with Oklahoma State University’s Robert M. Kerr Food and Agricultural Processing Center, and Mata is a meat specialist and consultant.
